Two-Pots Hash

If you're concerned about med-high glycemic foods, you can boil the potatoes for about 20-30 minutes.

They then become low-glycemic. In this case, you can have a roughly smashed potato base with other ingredients on top.

Otherwise, roasted is fine. 

Ingredients

red-skin (or multi-color) potato, boiled or roasted

sweet potato, boiled or roasted

beans, black or pinto (or both)

red onion (any kind)

leeks

bell pepper, any colors

fresh garlic

fresh jalapeño (or pickled)

fresh cilantro

cayenne pepper

cumin

oregano

turmeric

red pepper flakes

iodized salt (or white miso)

pepper

veg stock (for cooking)

black cumin (optional)

 

SALSA

low-salt, low-ingredient store bought brand OR...

fresh tomato

diced tomato (tinned or Tetra-Pak)

red onion

fresh jalapeño (or pickled)

lemon juice

garlic, granulated (or fresh)

adobo seasoning

iodized salt and pepper to taste
